Unlike most pink champagnes
which are a blend of red and white wines, the
Palmes d’Or Rosé is a “rosé
de saignée”, a technique
involving the maceration of grape juice and skins
together to obtain the desired rosé color.
A labor-intensive technique, the saignée
method provides an element of surprise as to what
exact tone will develop after second fermentation
in the bottle. However, it is just this technique
that is also responsible for the champagne’s
unique flavor profile.
The Palmes d’Or Rosé has a deep
copper color, rich with aromas of wild strawberries
and cherries lingering passionately on the palate
– a sensuous, velvety wine to share with
a loved one during a precious moment. This cuvée
may be enjoyed as an aperitif of unparalleled
quality, however its fine bubbles and powerful
aromas make it a perfect match for dishes including
lobster, pan seared foie gras, turbot or caviar.
Its strong aromas also make it ideal with a large
array of desserts and cakes.
The Palmes d’Or Rosé is available
only from selected fine wine merchants and top
restaurants.
“Given the enthusiasm we have encountered
during Jean-Pierre Vincent’s market visit
in 2002 and again this year, we are very optimistic
about the succes of this cuvée” says
Pascal Boyé, Director of Sales of Nicolas
Feuillatte in the Americas. “It will join,
and probably lead our family of Nicolas Feuillatte
Champagnes.”
