FRUIT VINEGARS

 
    In a large-scale production method the pure, absolutely natural fruit-juice is matured into fruit-wine, which then is fermented into fruit-vinegar and stored in glass demijohns during maturity time.

Production: After the fermentation and a maturing period, a pure cultured vinegar bacteria is injected in the wine, whereby the temperature and the oxygen supply were constantly watched, to guarantee optimal living conditions for the bacteria. To obtain the highest quality, the perfect conditions must be met. When the fermentation has stopped, the young vinegar will be stored in carboys.

 
   



 
   
TOMATO VINEGAR

Ripe tomatoes from Austria’s Burgenland were sorted out by hand, gently pressed, and the juice was then brought to a spirituous fermentation.

CUCUMBER VINEGAR
Ripe cucumbers from the Austrian province of Burgenland were hand picked, peeled, seeded, gently pressed, and the juice brought to a spirituous fermentation.

RED PEPPER VINEGAR
Ripe red peppers from the Austrian province of Burgenland were hand picked, peeled, seeded, gently pressed, and the juice was brought to a spirituous fermentation.
During storage after fermentation, sediments are removed several times, and subsequently the vinegar matures in carboys

GOLDEN DELICIOUS APPLE CIDER VINEGAR

Golden Delicious apples are harvested at the peak of their ripeness on the Harmer Estate in Stripfing (ca. 25 km north-east of Vienna). They are then sorted out, carefully pressed and delivered to the Wiener Essig Brauerei.
During storage after fermentation, sediments are removed several times, and subsequently the vinegar matures in carboys and then in small oak barrels.

APPLE CIDER VINEGAR WITH HONEY

This product is based on the Golden Delicious Apple Cider Vinegar, with a subtle touch of honey during the process, which reveals much more complex aromas.
